Huge Question that I need Answered!

You know how in Twilight, Alice sees Bella becoming a Vampire? Well, how exactly is she able to see that hapeen> Because Edward hadn't made the decision to turn her, and Bella hadn't made the decision to become a Vampire. Alice can only see what is going to happen AFTER a decision has been made. So i am really confused! Also, you know how the wolf gene was triggered by the Cullens' return? well, Jacob and the rest of the pack (other than Sam) changed AFTER the Cullens left, so I don't understand why the rest of them (after sam) were changing when there was no threat of Vampires (becasue they changed before laurent even showed up)

I don't know, these are the two questions that i can't firgure out no matter how hard i think about it. Any clarification would be much appreiated seeing as i am loosing sleep (literally) over these two questions.
